Chocolate Mega Muffins
- 1 cup all-purpose flour
- ¾ cup whole wheat flour
- ¼ cup Fiber Plan® Daily MixTM
- ¼ cup granulated sugar
- ¼ cup packed brown sugar
- 3 Tbsp. unsweetened cocoa powder
- 1½ tsp. baking soda
- ¾ cup fat-free milk
- ¾ cup unsweetened applesauce
- 1 Tbsp. vegetable oil
- 1 Tbsp. molasses
- 2 tsp. balsamic vinegar
- 1 tsp. vanilla
- 1/3 cup small chocolate chips
Instructions:
- 1. Preheat oven to 350*F. Spray forty eight 1 ¾-inch or eighteen 2 ½- inch muffin cups with nonstick cooking spray and set aside.
- In a bowl combine flours, Fiber Plan® Daily MixTM, sugars, cocoa powder, soda and a pinch of salt.
- In another bowl combine milk, applesauce, oil, molasses, vinegar and vanilla. Add to flour mixture. Stir until moistened. Batter should still be lumpy.
- Stir in half of the chocolate chips.
- Spoon batter into prepared muffin cups filling to 2/3 full. Sprinkle with remaining chocolate chips.
- Bake for 8 to 10 minutes for minis or 15 minutes for regular. Test with toothpick. Cool in pan for 5 minutes. Remove from muffin cups; serve warm, or cool completely and freeze up to 3 months. Reheat to serve. Makes 48 mini muffins or 18 regular muffins.
